Stuffed Prawns at Prescotts

What you’re eating: Five fresh black tiger shrimp are stuffed with a combo of bread crumbs, shrimp, garlic, and crushed red chili pepper. The stuffed prawns are then laid in a pie pan with clarified butter, topped with a lemon beurre blanc sauce and cooked in the oven. The prawns are served with your choice of side dishes, although Chef Christopher Rohe recommends the vegetable rice as the perfect complement.

Why you’ll love it: “They’re very simple but they’re fantastic,” Rohe says. “You’ve got this great texture of the shrimp and garlic stuffing, with a little heat from the chili peppers and lemony butter from the beurre blanc.” The stuffed prawns are not a regular item on Prescotts’ menu anymore, but “people just love them and are excited when they come out as a special” for holidays like Valentine’s Day and New Year’s Eve, Rohe says.
