Faces of Rochester

The Table Setters

By Megan Malugani

For longtime fans of Michaels, it’s hard to fathom a time before the tag team of Richard Rogers and Holly Grubb—table setters extraordinaire—became hard-working fixtures in the restaurant’s elegant dining room. It’s estimated that between the two of them, Richard and Holly have cleared and set at least 15 million tables over several decades, making them as familiar to patrons—and as enduring—as the restaurant’s signature steaks and velvety decór.

Richard, a Chatfield native, started bussing and setting tables at Michaels 48 years ago after working at the Ability Building Center (which provides employment for persons with disabilities and other special needs) and Orthopedic Appliances. He didn’t find the right employment fit until he got the job at Michaels, he says. Now, six days a week, he works a split shift so he is present for the lunch and dinner rushes. And, six days a week, he eats his lunch and dinner at the restaurant. Michaels’ walleye is his favorite, and food from any other restaurant is “flat” in comparison, Richard says. “I wouldn’t be happy any other place.”

Holly was born in Rochester (her family owned the North Star Bar), attended the Faribault School for the Deaf, and began setting tables at Michaels 31 years ago. She works only during the day and is known for the great care she takes in every place setting. She also takes the initiative to seat long-time customers at their favorite tables. Although she has tried to teach a little bit of sign language to her boss, Holly mainly communicates with her employer and colleagues by writing notes. Holly writes that she loves her job because “everybody” at Michaels—including colleagues and customers—is her friend and because “I like setting tables. It’s easy.”

Richard and Holly are a huge part of the Michaels tradition, according to owner Michael Pappas. They’re appreciated by colleagues and customers alike and missed when they’re absent. Simply put, says Pappas, “they’re exceptional.”
